Fruit is drawn exclusively from the top-most westerly section of the 1969 Cabernet Sauvignon plantings. Hand harvested, de-stemmed and crushed into open fermenters. Hand plunged twice daily until fermentation is complete, with some extended time on skins until tannins soften. Gravity filled to 2 French oak Bordeaux shaped barrels, one new and one two years old, for 18 months completing malolactic fermentation in the cool underground cellars. Blueberry and blackberry fruits inter-weaved with cassis and wafts of sage highlight the varietal characteristics. Cool climate Cabernet Sauvignon with floral vibrancy, the palate is rich and round where berry fruits dominate, some classic leafy herbs add a savoury note and the natural acidity gives the wine life and longevity.

This is the big daddy of the Yarra Yering stable, yet it's treated with remarkable restraint, further proof (if needed) of the brilliance of Sarah Crowe's winemaking. This is pure cabernet that needs nothing added or taken away.
