France's largest sweet wine appellation, the Rivesaltes AOC, is responsible for some of the richest, most complex sweet wines in the world. Part of the Languedoc-Roussillon wine region in the south of France and covering a great deal of ground, these wines are typically quite varied in nature.

Not to be not to be confused with Muscat de Rivesaltes AOC, which covers much of the same region but only includes Muscat grapes, the Rivesaltes AOC offers both red or white and includes Grenache Blanc, Grenache Gris, Grenache Noir, Macabeu, Malvoisie and Muscat varieties.

Rivesaltes AOC wines are vin doux naturels - they are made through mutage, a process of halting fermentation early to capture higher levels of residual sugar. Most wines from this region are aged considerably to allow this natural sweetness to gain complexity.
