Established by Ron and Elva Laughton, ever since the first vintage in 1982 Jasper Hill.
A blend of 20% Emily’s Paddock and 80% Georgia’s Paddock Shiraz wines, combining the creaminess, minerality and perfumed characteristics of the Emily’s in harmony with the ripe red berries and spiciness of the Georgia’s. The sum is superior to the individual components. Very elegant, power without too much weight; coming from a cooler year, this wine is delicious now and has medium term cellaring possibilities of 10-15 years.

"The decision was taken to blend Emily's and Georgia's Paddocks on the basis that the sum was grater than the parts. The colour is good, the bouquet fragrant and perfumed, the medium-bodied palate with juicy red black fruits, distinct cracked pepper and spice fruit. Has improved out of all recognition over the past nine months."

Australia's wine regions are scattered across the south and southeast, with almost every state boasting its own vineyards. Victoria, for example, is home to an impressive 21 wine regions. The wine region of Victoria has the highest number of grapevines than any other state in Australia. It is home to over 600 wineries and well-known regions such as Yarra Valley, Heathcote, and Rutherglen. Victoria is situated in the southeastern corner of Australia where due to the location, the climate has a cool maritime influence and is known for its outstanding Pinot Noir and Chardonnay, along with producing Australia’s most famed dessert Muscat and Topaque wines.
There are a number of different terroir levels throughout the wine region of Victoria which leads to the production of different ranges of wines. In the southern region of Victoria, the vines are regulated by the cool winds of the Bass Strait. Central Victoria consists of mostly flat terrain that tends to be drier and warmer than the rest of Victoria, which results in more fruit concentrated wines. It may be surprising to note that Victoria is the third most productive wine region in Australia, seeing as it does not have as many areas suitable for viticulture, which has resulted in the cellar door culture of Victoria being concentrated with smaller, but more personal boutique wineries.
Located to the north of the Great Dividing Range in Central Victoria, approximately an hour and a half’s drive from Melbourne, Heathcote is well known for their award winning Shiraz wines, which is characterized in this region by a deep dark ruby colour with a rich silky tannins. The wine region is situated between Bendigo and Goulburn Valley and borders New South Wales to the north. The grapevines of Heathcote are planted along the sides of the hills of Mount Camel. Due to the elevation of the terrain, the cool winds keep the grapes cool and the temperature regulated which aids in a slow and steady process of producing only the finest wines. Another important factor that aids in growing the grapes is the calcium rich Cambrian soil that has good water retention capabilities. Because of this, the wineries of Heathcote rarely need to irrigate their vineyards. Due to these favourable conditions, the wines from Heathcote tend to be extremely rich and flavourful.

Established by Ron and Elva Laughton in Heathcote, Victoria, Jasper Hill is one of Australia's most respected and sought-after producers of cool climate Shiraz. A family owned and operated business, the winery has been producing vintages for the past 34 years. With Ron's name being synonymous with great Shiraz, so too is his daughter Emily's who has been involved in the viticulture and winemaking since 2001. Emily's husband Nick also works in the cellar, while her sister, Georgia works in the cellar door.
Grown in the area's rare Cambrian soil, Jasper Hill's wines are all made from estate-grown grapes, cultivated using organic and biodynamic principles from vineyards planted in 1975. The portfolio of Shiraz and aromatic whites is derived mostly from their two famous vineyards: Emily's Paddock and Georgia's Paddock. The dry-grown, hand pruned vines result in low-yielding fruit with a depth of color and flavor. A similar mantra continues in the winery as the winemakers attempt to 'interfere' as little as possible.
