To celebrate the release of the 25th Bond film, Champagne Bollinger has produced a limited-edition champagne from the 2011 vintage. 100% Pinot Noir from Aÿ. Cellar aged for seven years, sealed with a natural cork. The extraordinary harvest of 2011 led to the creation of Pinot Noir which is complex, powerful and harmonious, celebrated in this wine of great character. To the nose: the wine opens with grilled and roasted aromas, followed by hints of honey, hard candy and yellow-fleshed fruits such as the Mirabelle plum. On the palate: rich notes of stewed fruits are expressed with a beautiful round texture, elevated by a finish of mineral notes evocative of flint.

There’s a lovely toasty and zesty oak that emerges as that Dom Pérignon character begins to emerge. When you take a sip you’re greeted with an extremely refreshing taste sensation - more of those stone fruits coming into play as soon as it hits the tongue. There’s a little grapefruit giving that zing of acidity combined with a citric freshness on the mid-palate. The finale to our story gives us milk lemon juice, a sweet ting and a lime zest, which plays with the taste buds, creating a long-lasting finish.

This success is mainly due to the application of winegrowers, from generation to generation, to cultivate and produce unique parcels. Champagne Drappier is today the first and only Carbon Zero Champagne house in the world. The Grande Sendree is only produced in exceptional years. Nose of freshly pressed black grapes, of red, white and citrus fruits. Ample palate with flesh of vineyard peach and bouquet of aromatic herbs. Small spicy notes in the finish. A striking biodynamic Champagne of outstanding value. The wine spends four years on lees and is disgorged as required. Resulting in a creamy-textured Champagne that shows tons of energy and finesse. The aromatics emerge with time, rounding out this compelling effort. Notes of ripe apricots, flowers, smoke and minerals. The fruit comes from 100% Grand Cru vineyards in Epernay. A blend of four sites, made from 50 per cent 2004 and 50 per cent 2005 that has been aged in large format oak barrels.

LOUIS ROEDERER CHAMPAGNE BRUT ROSE 2013
In order for grapes to be used in the creation of a great rosé champagne, they have to attain perfect maturity, which is sometimes difficult to achieve in the changeable Champagne climate. This is why Louis Roederer decided to invest in the vineyards at Cumières, where the shallow calcareous clay soil, which is on south-facing slopes bathed in the light reflected from the banks of the river Marne, enables the grapes to attain optimum phenolic maturity. A blend of around 65% Pinot noir and 35% Chardonnay, 20% of which is wine matured in oak tuns, the Rosé Vintage cuvée is generally matured on lees for 4 years and left for a minimum of 6 months after dégorgement (disgorging) to attain perfect maturity. The wine has fruity aromas of wild red berries, followed by floral notes, and the sugary and spicy fragrance of zest; and the aromas of dried fruit and cocoa result from the wine’s vinifying in oak tuns. Rich and full-bodied, the Rosé Vintage exalts the maturity of the fruit. A sparkling wine with an initial impression of freshness, it opens smoothly with almost exotic notes, combined with the pure minerality of the Chardonnay grapes.

Le Blanc de Blancs is produced in small quantities in exceptional years only and fully expresses the superb calibre of great Chardonnay from the best crus of the Côte des Blancs. After 6 years ageing in our cellars, remarkable minerality and low dosage make this an outstanding wine that can accompany a variety of flavoursome dishes including poultry and fish, or be served on its own to celebrate a special occasion. Nose: Delicate, but still very expressive, the nose has wonderful aromatic freshness with notes of pomelo, white fruits, lime tree, frangipani flowers, and delicate hints of pineapple and ginger. Palate: Right from the start, this wine is striking, yet voluptuous and vibrant, showing a silky texture with a lively edge, and finishing with a balanced bittersweet flavour. It releases notes of passion fruits, citrus fruit, ripe white fruit such as vine peaches, and subtle notes of acacia honey that bring a velvety sensation. The long finish is tightly wound on the pure line of characteristic chalky minerality for which the Côte des Blancs is famous.

But Jean-Manuel is not a man to just rest on his laurels; he consulted to several fledgling English vineyards including Nyetimber and Ridgeview, winning several gold medals, as well as the trophy for the Best Sparkling wine in the International Wines and Spirits Competition- trumping many of the biggest names in France.
