From a 0.36 hectare plot in the “Champs Traversins”, in the heart of historic Echézeaux. It’s a north-south planting just outside the Combe d’Orveau. Brown soil, not particularly thick. This is Thibault’s third vintage of this wine, and he feels he now understands the vineyard much better than when he first made it. Fermentation was slow this year, which has given a wine of huge complexity and detail. There are lovely touches on the palate with creamy black cherry and delightful tannins which are initially intensely silky before transforming into firm, rocky, limestone layers that coat the palate

Once it has spent fifteen years maturing in American white oak casks approximately 30% is transferred into Spanish Oloroso casks to spend a further three years maturing. Then, when both elements have reached 18 years, we blend them back together to create a whisky with a rich bouquet and full, rounded flavour. The taste is balanced between honey, malt and flowery scents. Dates and figs emerge in the background with a hint of wood smoke.

The 2018 Volnay 1er Cru Frémiets exhibits lovely aromas of raspberries and cherries mingled with orange rind, spice and raw cocoa. On the palate, it's medium to full-bodied, lively and fine-boned, from more calcium-rich soils than Les Chevrets and built around bright acids and fine, chalky tannins.

"The 2017 Nuits Saint-Georges Aux Argillats 1er Cru needs some coaxing from the glass, only reluctantly revealing sultry blackberry, iodine and hints of blue fruit lending some “light” with time. This is certainly tightly coiled at the moment.
