Philippines
Due to its high temperatures and acidity in the soil, the Philippines does not have a particularly suitable terroir for grapegrowing, instead importing much of its grape-based wines from Australia and Europe. However, this island country does have a wine industry, producing many other fruit-based wines from the likes of coconuts, strawberries, mangoes, bananas, pineapples, papayas, and duhat (also known as Java plum or jambu). Other local crops lending themselves to indigenous wines include sugar cane, rice, honey, and palm sap. The uniqueness of these wines has spurred their popularity in foreign markets. The Philippines also produces liqueurs with histories dating back to the colonial era under the term ‘wine’. These include anisado, an anise liqueur infused with herbs, and Mallorca, a variant of anisado that includes sugar and can be used in cooking.

A premium-aged, single-island rum from the Philippines, Don Papa Rum is created on the foothills of the active volcano Mt. Kanlaon, where the finest sugar cane is milled to produce sweet, rich molasses.
After harvest, fermentation and distillation, Don Papa Rum is blended to perfection by our Master Blender before coming together in an alchemy of magic in our bottle.
