drawn from Peybon's biodynamically-certified limestone and clay soils in the Premières Côtes de Blaye (on the right bank overlooking the picturesque Gironde estuary). Wild yeast fermented with 90% fermented and aged in concrete and 10% fermented and aged in two- to three-year-old oak. The wine was then bottled unfiltered. Once again, it is a world away from the old stereotype of Bordeaux--full of juicy, open knit fruit with terrific energy and freshness, this is a wonderfully vibrant red, with waves of lip-smacking fresh plum, anise and bay leaf notes, a twist of fine tannins and serious drinkability.
