Canada is a wine-producing country known primarily for its Icewine – a sweet dessert wine with concentrated sugars, intense aromatics and flavours, and high acidity. This North American nation, with its extremely cold winters, has become the world’s largest Icewine producer. The country has roughly 12,500 hectares of grapes under vine for grapegrowing overall. Most wine production occurs in the two provinces of Ontario (on the Niagara Peninsula) and British Columbia (in Okanagan Valley) –
