Picked in the cool of first light, fermented naturally in ceramic egg. No additions to speak of, until a small amount of sulphur at the end to help it into bottle. Decanter

While the Bondar label focusses primarily on Grenache and medium-weight Shiraz, Andre Bondar tried his hand at Fiano in 2017, when a friend offered him some surplus grapes. Given the high demand for Fiano in McLaren Vale, he was lucky. He achieves a beautiful, fluid yet chalky texture by fermenting a small portion on the skins and ageing it in a combination of ceramic egg and old oak on the lees. Citrus and pear flavours fill the mid-palate of this pure, pristine white. It's very dry and minerally on the finish.
